Ingredients
- 3/4 cup walnuts
- 1/2 cup gluten-free oats
- 1/2 cup raisins
- 1/2 cup medjool dates (pitted)
- 1 vanilla bean (scraped)
- 2 teaspoons cinnamon
- pinch salt
- 1/4 cup raisins (optional)
Servings: cookies
Instructions
- Process all ingredients, except optional raisins, in food processor until well combined, but still chunky. Mix in additional raisins and shape dough into balls or cookies.

Helpful Hints:
If you would like your cookies to be a little sweeter substitute vanilla bean with vanilla extract.
