Last week, my baby niece turned 1! She’s grown so big — I just knew I had to contribute to her special birthday party! Because Adaline is only 1, it’s really important she only eats foods that will help her little body grow. So with the help of her mom, she avoids highly processed and high sugar foods. But what about for her birthday party? When most people think of a kid’s birthday party, they think cake, ice cream and soft drinks. Thankfully, with all time I have spent in the kitchen and creating my cookbook I knew just what to doΒ π
Because we wanted to give her that traditional birthday party feel, we focused on delicious treats that were healthy and fun for the kids. We needed a cake for sure, so I made two kid-friendly vegan cheesecakes: one banana and one strawberry! Adaline needed her own special smash cake to enjoy (which is absolutely one of the cutest things to see, a 1 year old going to town on her first cake!), and all the guests got a mini cheesecake with a little flag on top!The snacks provided were berries, watermelon, cucumbers and carrots. Everyone loved it! The real big hit were the mini cheesecakes though, who knew kids absolutely adored mini flags?! We allowed Adaline’s smash cake to completely thaw so it was nice and soft, and she clearly loved it. π
